Taqueria Pork Bowls

These Taqueria Pork Bowls are bold, flavorful, and perfect for busy weeknights. The seasoned pork comes together quickly in one skillet, and everyone can build their bowl just the way they like it. It’s one of those flexible meals that works great for leftovers, too.

Ingredients (Serves 4–6)

For the Pork

  • 1 lb ground pork (80/20 blend for best flavor)
  • 1 tbsp oil (avocado or olive oil)
  • ½ tsp black pepper
  • 1 tsp salt
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ¼ tsp cayenne pepper (optional, for extra heat)
  • ½ cup diced onion
  • 2 cloves garlic, minced
  • ¼ cup water

For the Bowls

  • 2 cups cooked rice
  • 1 can black beans, rinsed and drained

Instructions

Step 1: Brown the Pork
Heat a skillet over medium-high heat and add oil. Add ground pork and cook for 3–5 minutes, breaking it up as it browns. Season with salt and pepper.

Step 2: Cook the Aromatics
Add diced onion and minced garlic to the skillet. Cook for another 3–5 minutes, until the onions soften and become translucent.

Step 3: Add the Spices
Stir in chili powder, cumin, paprika, and cayenne (if using). Cook for about 2 minutes to let the spices fully bloom and coat the pork. (You could use a packet of taco seasoning, or we prefer Tastefully Simple’s Mom’s Favorite Taco Seasoning)

Step 4: Simmer
Add ¼ cup water to deglaze the pan. Stir well, cover, and let simmer for 10–15 minutes so the flavors meld and the pork is fully cooked.

Step 5: Assemble the Bowls
Layer cooked rice and black beans in serving bowls. Spoon the seasoned pork over the top.

Step 6: Top and Serve
Add your favorite toppings such as shredded cheese, sour cream, diced tomatoes, avocado slices, chopped cilantro, or a squeeze of lime. Serve immediately and enjoy!


Optional: Corn Esquites Topping

To make these bowls extra special, I love adding a quick corn esquites topping.

Ingredients

  • 2 cups roasted corn (frozen roasted corn works great, or roast drained canned corn in a hot skillet)
  • 4 tbsp mayonnaise
  • ¼ cup shredded Monterey Jack cheese
  • 1 tsp chili powder (adjust to taste)
  • Juice of 1 lime
  • Optional: minced jalapeño
  • Salt and pepper to taste

Instructions

Mix all ingredients together until well combined. Spoon over your pork bowls for a creamy, flavorful topping.
