Meal Planning Made Simple šŸ“

Hi friends, and welcome to my very first post on Simply Samantha! Since this space is all about real life made simple, I thought it was only fitting to start with one of the things that keeps me sane as a busy wife, mom, and employee: meal planning.

Now before you roll your eyes and picture color-coded binders or endless hours in the kitchen, let me stop you right there. Meal planning doesn’t have to be complicated—it can be as simple as writing down a few ideas on the back of an envelope. The goal isn’t perfection. It’s about reducing stress, saving time, and making sure your family is fed without breaking the bank (or your brain).


Why Meal Planning Matters

  • Less Stress: No more standing in front of the fridge at 5 p.m. wondering, ā€œWhat’s for dinner?ā€
  • Save Money: Planning helps you shop smarter and waste less food.
  • Healthier Choices: Having a plan means you’re less likely to grab takeout or default to boxed mac and cheese (though let’s be real—there’s a time and place for that, too).

My Simple Approach to Meal Planning

  1. Pick 3–4 Core Meals.
    I don’t plan seven nights a week. Instead, I choose a handful of go-to meals and rotate leftovers or quick fixes on the other days.
  2. Theme Nights.
    Taco Tuesday, Slow Cooker Wednesday, Pizza Friday. Themes make it easy to plug in ideas without overthinking.
  3. Use What You Have.
    Before I plan, I check the fridge, freezer, and pantry. I try to build meals around what’s already there. We all know how shopping for ingredients for ONE meal easily turns into a $50+ grocery trip!
  4. Get Others Involved.
    Everyone in the family picks one meal for the next week. This gives you a break from deciding, shopping for, and cooking all 365 suppers throughout the year!
  5. Keep It Flexible.
    If something comes up (practice runs late, or I just don’t feel like cooking), I swap meals around. The plan is a guide, not a rulebook. Keep it simple!

A Peek at This Week’s Plan

  • Monday: BBQ chicken sliders with coleslaw
  • Tuesday: Tacos (because of course 🌮)
  • Wednesday: ONE Pot Mandarin Orange Beef & Rice (Tastefully Simple Meal)
  • Thursday: Leftovers / Quick Fix (one night a week is for leftovers or quick fix, usually Thursdays to help clean out the fridge before the weekend)
  • Friday: Homemade pizza night

Final Thoughts

Meal planning isn’t about being Pinterest-perfect—it’s about making your life a little easier. Start small, give yourself grace, and remember: some weeks you’ll nail it, some weeks you won’t. And that’s okay.
