Crab Salad with Cucumber & Tomato
Some recipes just feel like summer.
My last post was about taking deli crab salad (or homemade crab salad) and eating it with cucumbers… well, I’ve officially taken it a step further and combined it all together into one easy, refreshing salad!
This crab salad is cold, crunchy, creamy, and somehow feels both light and filling at the same time. Plus? It takes almost no effort, which honestly makes it even better.
And before anyone judges the imitation crab… listen. I’ve loved this stuff since I was a kid, and apparently that obsession followed me right into adulthood. 😂
If you need an easy lunch prep idea, quick side dish, or something simple to keep in the fridge during busy weeks, this recipe is it.
Crab Salad with Cucumber & Tomato
Ingredients
- 1 lb (16 oz) package imitation crab meat
- 1 English cucumber, diced small
- 2 medium Roma tomatoes, diced and drained
- 1/4 cup chopped green onions
(Red onion works great too!) - 3 cloves garlic, pressed
- 1/2 cup mayonnaise, or to taste if less is desired (you can also play around with a mayo + Greek yogurt mix if you prefer!)
- Dash of lemon juice
- Dill sprinkled on top, optional garnish that provides big flavor!
- Salt & pepper to taste
Directions
Start by chopping or shredding the imitation crab into small pieces. You can use a knife, or pulse it in batches in a food processor. I like to shred it apart a little so the dressing coats everything better.
Dice your cucumber into small pieces.
For the tomatoes, Roma tomatoes work best because they’re less watery. After dicing, drain off any extra juice. You can even remove the seeds if you want the salad to stay fresh longer without getting watery.
In a large bowl, combine:
- shredded crab
- cucumber
- tomatoes
- green onions
In a smaller bowl, mix together:
- mayonnaise
- pressed garlic
Add the dressing to the salad and stir until combined. Add extra mayo if you prefer a creamier salad. Season to taste.
Refrigerate until ready to serve.
Simple Serving Ideas
This salad is delicious:
- on crackers
- in lettuce wraps
- on toasted bread or croissants
- eaten straight from the bowl while standing at the fridge (very relatable)
It’s fresh, simple, full of flavor, and one of those recipes that somehow tastes even better the next day.
